After careful hand picking and sorting, each batch of Pinot Noir was macerated on the skins at room temperature before natural fermentation. Each barrel was carefully mixed by hand daily before being pressed into French oak barrels after a month of maceration. Each barrel underwent natural lactic fermentation, before blending and bottling 16 months after harvest.
